Biscuits and Gravy Casserole

Ingredients

A comforting twist on the classic Southern dish, this meal brings savory sausage and store-bought biscuits together for a convenient baked casserole.
Cooking spray
1 lb. breakfast sausage links
1 Tbsp. olive oil
1 small onion, chopped
5 Tbsp. unsalted butter, divided
1/3 cup all-purpose flour
3 cups low-fat milk
1 1/2 cups shredded sharp Cheddar cheese
12 frozen biscuits

Directions

Preheat oven to 350 degrees F. Lightly grease a 9x13" baking dish with cooking spray. Remove sausage from casings. In a 12" skillet, heat oil over medium-high. Add sausage and onion. Cook until sausage is cooked through and onion is translucent, breaking up sausage into smaller chunks with a wooden spoon, 5 to 7 minutes. Using a slotted spoon, transfer mixture to a bowl.
Add 4 tablespoons butter to skillet over low and let melt. Whisk in flour and cook 1 minute, whisking constantly. Gradually add milk and increase heat to medium. Cook until mixture thickens and bubbles, whisking constantly, 9 to 10 minutes. Add shredded cheese and stir until completely melted. Remove from heat and stir in sausage mixture. Season sausage gravy with salt and pepper.
Transfer sausage gravy to prepared baking dish and top with biscuits. Bake until sausage mixture is bubbling and biscuits are golden brown, 30 to 35 minutes. Microwave remaining 1 tablespoon butter until melted. Brush biscuit tops with melted butter and let sit 10 minutes before serving.
