Brussels Sprouts Salad with Dried Cherries

Ingredients

Hearty shredded Brussels sprouts won't wilt in the Dijon dressing, making this salad a great make-ahead option. Pair with tart dried cherries and toasted pecans.
1/2 cup pecans
1/4 cup lemon juice
2 Tbsp. grainy Dijon mustard
1/4 cup olive oil
1/4 cup grated pecorino cheese
3 (8-oz.) packages Brussels sprouts, shredded
1/2 cup dried cherries
Brussels Sprouts Salad with Dried Cherries

Directions

In an ungreased small skillet, toast pecans over medium-low until deep golden, 3 to 5 minutes, stirring often. Remove from heat and let cool completely.
Meanwhile, in a large bowl, whisk lemon juice, Dijon and oil until well combined. Stir in pecorino. Season with salt and pepper to taste. Add Brussels sprouts and toss until well coated. Let stand 2 hours or up to 5 hours.
Chop pecans and add to salad, along with dried cherries. Toss to combine.
