Broccoli, Tuna and White Bean Salad

Ingredients

Keep canned beans and albacore tuna in your pantry to make this satisfying, affordable salad for a quick dinner. Any leftovers pack up perfectly for lunch the next day.
1 (12-oz.) bag broccoli florets
3 Tbsp. olive oil
1/4 cup white balsamic vinegar
2 Tbsp. grainy Dijon mustard
1/4 tsp. sugar
1 red bell pepper
2 (5-oz.) cans solid white albacore tuna
1 (15.5-oz.) can cannellini beans
1/2 (5-oz.) package baby arugula
Broccoli, Tuna and White Bean Salad

Directions

To a medium microwave-safe bowl, add broccoli and 1/4 cup water. Cover with vented plastic and microwave until stems are tender, 5 minutes.
Meanwhile, in a large bowl, whisk together oil, vinegar, mustard and sugar. Season with salt and pepper to taste. Seed and thinly slice bell pepper. Drain tuna. Drain and rinse beans.
Drain broccoli and add to large bowl along with bell pepper, tuna and beans. Toss until well combined. Add arugula and toss. Season with salt and pepper to taste.
