Chicken, Rice, and Broccoli Dinner

Ingredients

1 Tbsp. olive or canola oil (2 Tbsp. if using regular, not nonstick, skillet)
4 (4 oz.) boneless chicken breast halves
1 (10.75 oz.) can condensed, reduced-sodium cream of chicken soup
1 1/2 cups water
1/3 cup lemon juice
1/4 tsp. freshly ground balck pepper
1/2 tsp. garlic or onion powder
1/4 tsp. paprika
1/2 tsp. dried thyme
2 cups uncooked Minute Rice Brown Rice
2 cups fresh broccoli florets (about 1 head of broccoli)

Directions

1. Heat olive oil or canola oil in a large, deep nonstick saucepan on medium-high heat. Add chicken; cook 15 minutes on each side or until cooked through. Remove from skillet and put on plate.
2. Whisk cream of chicken soup and water together in a small bowl. Add lemon juice, black pepper, garlic or onion powder, paprika, and thyme. Add mixture to skillet and bring to boil over high heat.
3. Stir in rice and broccoli. Top with chicken and juices from plate; cover. Cook on low heat for 5 minutes. Serve.
