Herbed Spring Greens with Shiitake Saute

Ingredients

12 oz Shiitake mushrooms, fresh
2 tablespoon Hannaford Inspirations Basil Dipping Oil
1 pkg Hannaford Inspirations Spring Mix Salad
2 tablespoon Fresh basil, cut into thin strips
6 tablespoon Hannaford Inspirations Balsamic Vinaigrette
1/4 teaspoon Kosher salt
4 teaspoons Black pepper, freshly ground
1 oz Parmesan cheese, shaved

Directions

1. Prepare mushrooms. Remove stems and discard (or save to use for broth). Slice mushroom caps thinly. In a large nonstick skillet, heat oil over medium-high heat. Add mushrooms and sauti until softened and slightly browned, approximately 5 minutes. Remove mushrooms from heat and set aside.
2. Toss greens with fresh basil and balsamic vinaigrette and divide among four salad plates. Top each serving with a quarter of the sautied mushrooms. Sprinkle a little bit of the salt and add a grinding of fresh pepper over each plate. Top with a few shavings of Parmesan cheese and serve immediately.
