Cajun Stuffed Peppers

Ingredients

Cajun Stuffed Peppers
4 each Sweet green bell peppers
15 oz Can kidney beans, rinsed and drained
1 cup Cooked brown rice
1 teaspoon Cajun spice
14 oz Canned, peeled tomatoes, diced with herbs and garlic
1/2 cup Low fat mozzarella cheese, grated
Cajun Stuffed Peppers

Directions

1. Cut off tops of peppers, and hollow out seeds and veins
2. Mix beans, rice, and spices in medium-sized bowl. Fill peppers with mixture and place in microwave proof containers.
3. Place < inch of water in bottom of container and cover.
4. Microwave on high for 15 minutes, placing cheese on top for last 4 minutes.
