What You Need: 2 large eggs; 1 cup cold water; potato latke mix; 1/8" hot vegetable oil. How to Prepare: Mixing Directions: In a medium bowl, beat two eggs with a fork until blended. Add 1 cup cold water and mix well. Stir in contents of this package. Allow batter to thicken for 8 to 10 minutes. Stir. Frying Directions: Drop tablespoons of batter into 1/8" hot vegetable oil in a large skillet and brown on both sides. Serve them plain, or with sour cream, apple sauce, syrup or jam. Makes about 7 servings (18-24 potato latkes).
