1. Center a rack in oven and heat to 350 degrees. Grease a 9" round cake pan and set aside.
2. In a medium bowl, whisk all dry ingredients. In a large bowl, whisk eggs, honey, 1/3 cup cider, and oil until fully blended. Add dry ingredients to egg mixture and stir until just combined (a few small lumps may remain).
3. Fold in apples, then transfer batter to prepared pan and smooth top with a rubber spatula. Transfer to oven and bake until a toothpick inserted in center of cake comes out clean, 40 to 45 minutes.
4. Let cool in pan for 20 minutes, then carefully tip cake out of pan and let cool completely on a wire rack. When cake has cooled, whisk confectioners' sugar and remaining 2 tablespoons cider in a medium bowl until smooth. (Glaze should be thick but pourable; add another tablespoon of cider if needed to reach desired consistency.) Pour over cooled cake and let sit 15 to 20 minutes before serving.
