1. Preheat grill to medium-high; clean and oil the grill. Place onion slices on the grill and cook each side about 5 to 7 minutes, until marked. Transfer to a cutting board and let cool a few minutes, then chop.
2. Season chicken breasts with salt and pepper. Place chicken on grill, cover, and grill until cooked through, about 3 to 5 minutes per side. Let rest for 5 minutes, then cut into 1/4-inch-thick slices.
3. Form dough into 2 pizza crusts. Place 1 pizza crust on the grill, cover, and cook until the top side has formed large bubbles and easily lifts away from the grill with a metal spatula, about 2 minutes. Flip the dough, and top with half of each topping: sauce, goat cheese, grilled chicken, and grilled onion. Grill for 2 minutes, covered, then top with half the arugula and grill, covered, for an additional 30 seconds. The goat cheese should be soft and beginning to melt. Using a spatula or tongs, slide pizza onto a serving plate. Repeat with the remaining dough and toppings. Cut each pizza into 4 pieces and serve.
