1 pkg. (8 oz.) Grab-n-Go Shrimp Scampi portion
3 Tbsp. Taste of Inspirations Blackened Cajun Rub
3 Tbsp. olive oil
1 pkg. (8 oz.) Pero Family Farms Trimmed Asparagus
1/2 cup Hunt's Fire Roasted Diced Tomatoes
1/2 cup Taste of Inspirations Alfredo Sauce
1 pkg. (8.8 oz.) Nature's Promise Microwave Jasmine Rice

Blackened Cajun Shrimp Alfredo over Rice

Blackened Cajun Shrimp Alfredo over Rice

directions
Preheat oven to 425 degrees F.
Remove plastic wrap from around Grab-n-Go Shrimp Scampi container and shake 1 Tbsp. Blackened Cajun Rub on top. Place shrimp in preheated oven. Bake for 10 minutes until done.
Heat a medium-sized skillet over medium-high heat. Add in 2 Tbsp. olive oil. Chop asparagus into 2" lengths and when oil is shimmering, add in asparagus chunks and saute until browned and cooked, about 3 minutes. Add in remaining Blackened Cajun Rub and cook an additional 2 minutes until fragrant. Add in tomatoes and remove pan from heat. Add in alfredo sauce and mix lightly until blended.
Follow microwave instructions for rice. Portion between two plates when done. Top with vegetables and sauce, placing the shrimp on top. Enjoy!
