Cheesy Broccoli, Wild Rice and Mushroom Casserole
Ingredients
2 Tbsp. olive oil
4 Tbsp. butter
2 large shallots, finely chopped
3 cloves garlic, minced
1 (8-oz.) package sliced baby bella mushrooms
1 Tbsp. Nature's Promise Organic Thyme, roughly chopped
1/2 tsp. Nature's Promise Organic Crushed Red Pepper
1 tsp. salt
3 (16-oz.) packages Harvesting Good Broccoli Florets, thawed and drained
2 cups (about 4-oz.) Taste of Inspirations Extra Sharp White Cheddar Cheese, shredded
1 cup Hannaford All Purpose Whipping Cream
1 (6.3-oz.) box Hannaford Long Grain and Wild Rice Mix, prepared according to package directions

Cheesy Broccoli, Wild Rice and Mushroom Casserole

directions
Preheat oven to 350 degrees F.
Heat olive oil and butter in large skillet over medium-high heat. Add shallots and garlic and cook, stirring, until fragrant 3 to 4 minutes. Add mushrooms, thyme, crushed red pepper and salt. Cook for 8 minutes, stirring occasionally.
Reduce heat to medium-low heat. Add broccoli florets, 1 cup cheddar cheese and cream. Cook stirring to combine, 2 to 3 minutes. Stir in prepared rice and toss to coat.
Pour mixture into a 13x9-inch casserole dish. Sprinkle remaining cheddar cheese over the top of the casserole.
