Chicken and Cotija Tostadas with Tomatillo and Lime
Ingredients
8 La Burrito 8-inch yellow corn tortillas
1/2 cup tomatillo salsa or Goya Salsa Verde
1/2 Nature's Place Rotisserie Chicken, skin and bones removed, meat shredded
1 cup Cacique Cotija Cheese, crumbled
1 avocado, peeled, seeded and sliced
1 cup roasted bell peppers, seeded and diced
1 can (14.5 oz.) Goya Black Beans, drained and rinsed
1/2 small red onion, thinly sliced
1/2 cup chopped fresh cilantro

directions
1. Toast tortillas in a nonstick skillet over medium heat until golden brown in spots, about 2 minutes. Turn; toast on other side another 1-2 minutes.
2. Lay tortillas out in a single layer on a serving platter. Spread each with 1 tablespoon tomatillo salsa. Divide chicken and cotija cheese among tortillas. Top with avocado, peppers, beans, onion and cilantro. Serve with lime wedges and pico de gallo.
