1. Stir mustard and syrup together in a small bowl and spread onto one side of each bread slice. Place a slice of cheese on each of four slices of bread, followed by ham and remaining cheese. Set remaining bread slices on top, maple-mustard side down.
2. Beat eggs in a large bowl. Working with one sandwich at a time, submerge sandwiches in beaten eggs and let sit 30 seconds; transfer to a platter or baking sheet.
3. Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add two sandwiches to skillet and cook, turning once or twice, until outsides are golden and cheese has melted, about 2 minutes per side. (If cheese isn't fully melted, cover skillet and cook 30 more seconds.) Repeat with remaining butter and sandwiches and serve immediately.
