1. Heat oven to 175 degrees (or as low as your oven will go) with a rack in middle position. Using a sharp knife or a mandoline, slice oranges into 1/8"-to 1/4"-thick rounds. Arrange in a single layer on a parchment-lined baking sheet and pat dry with paper towels.
2. Bake until slices are very dry and liquid has fully evaporated, about 3 hours. Let cool completely.
3. When ready to assemble kits, add to each jar 1/3 cup brown sugar, two cardamom pods, two whole star anise, one cinnamon stick, 1/2 teaspoon allspice berries, 1/2 teaspoon peppercorns, and three dried orange slices.
