Naan Pizzas with Chicken Sausage and Pesto
Ingredients
1 tsp. olive oil
2 uncooked Italian chicken sausage links, casings removed
1/4 cup thinly sliced red onion
2 cups baby spinach, coarsely chopped
4 mini naan breads
1/4 cup pesto
2 cups Taste of Inspirations Shredded Pizza Blend cheese
1/2 pint cherry tomatoes, quartered
1 salad kit with dressing, prepared according to package instructions

Naan Pizzas with Chicken Sausage and Pesto

Naan Pizzas with Chicken Sausage and Pesto

directions
1. Heat oven to 400 degrees with a rack in middle position.
2. Heat oil in a medium nonstick skillet over medium-high until shimmering. Add sausage and onion and cook, stirring and breaking sausage into small pieces, until cooked through, 5 to 7 minutes. Stir in spinach and remove from heat.
3. Place naan on a baking sheet. Spread 1 tablespoon pesto evenly over each, leaving a 1/2" border all around. Top evenly with sausage mixture, then sprinkle with cheese and tomatoes.
4. Bake pizzas until cheese is melted and edges are lightly browned, 8 to 10 minutes. Serve alongside salad.
