1. In a medium bowl, toss shrimp with seasoning and set aside.
2. Melt butter in a large skillet over medium. Cook, swirling skillet and scraping bottom occasionally with a wooden spoon, until milk solids are deeply browned and smell toasty, 2 to 3 minutes.
3. Add shrimp and cover. Cook, stirring occasionally, until shrimp are just opaque and cooked through, 3 to 5 minutes. Remove from heat and stir in lemon juice.
4. Use a slotted spoon to divide shrimp among buns, then drizzle remaining butter mixture over top. Sprinkle with chives and serve with lemon wedges.
