Dana's Greek Penne Salad
Ingredients
1 (16 oz.) pkg. penne pasta
1 cup drained and chopped sundried tomatoes
1 (6 oz.) pkg. crumbled feta cheese
1/4 cup diced red onion
1/2 cup pitted and sliced kalamata olives
1/4 cup chopped Nature's Place trademark Organic Mint
1/4 cup chopped Nature's Place Organic Parsley
1/4 tsp. freshly ground black pepper
1/2 cup Taste of Inspirations trademark Balsamic Vinaigrette Salad Dressing, plus additional 1/4 cup, if needed

Dana's Greek Penne Salad

  • Cook Time:10 minutes
directions
1. Bring 1 gallon water to a boil in a large pot. Add 1 Tbsp. salt, stir, then add pasta. Cook until just al dente, about 8 to 10 minutes. Drain, rinse with cold water, then transfer to a large bowl.
2. Add the remaining ingredients and toss. Serve warm, room temperature, or chilled. May be prepared 1 day in advance (if so, add an additional 1?4 cup vinaigrette and toss just before serving).
