David Turin's Rum Flambeed Bananas with Brownies and Sweet Mascarpone
Ingredients
2 Tbsp. butter (sauce)
2 bananas, cut into chunks or slices (sauce)
1/2 cup brown sugar (sauce)
1/4 cup dark rum (sauce)
Juice of 1/2 lemon (sauce)
Juice of 1/4 orange (sauce)
Pinch of orange zest (sauce)
Pinch of lemon zest (sauce)
1/2 tsp. salt (sauce)
1 cup mascarpone cheese, softened (sweet mascarpone)
2 Tbsp. powdered sugar (sweet mascarpone)
1/8 tsp. cinnamon (sweet mascarpone)
1/2 Tbsp. vanilla extract (sweet mascarpone)
4 brownies
4 scoops vanilla ice cream
4 sprigs of mint
powdered sugar

David Turin's Rum Flambeed Bananas with Brownies and Sweet Mascarpone

directions
Prepare the sauce:
1. Saute bananas in butter.
2. Flambe bananas with rum; cook until flame burns out.
3. Add brown sugar, lemon and orange juice, zest and salt.
4. Simmer until the sauce is thick.
Prepare the sweet mascarpone:
1. Mix softened cheese with powdered sugar, cinnamon and vanilla.
Plate it up:
1. Schmear sweet mascarpone on plate.
2. Split each brownie and place one half on top of the cheese.
3. Top with a scoop of vanilla ice cream.
4. Drizzle with rum sauce.
5. Top with the other half of the brownie.
