1. Heat oven to 400 degrees with a rack in middle position. Line a baking sheet with parchment paper. In a small bowl, stir together cheese, parsley, butter, garlic, and pepper, then set aside.
2. Working on a lightly floured surface, roll each sheet of puff pastry into a 12" square, then cut each into a 12" circle. Transfer one circle to prepared baking sheet and brush edge with egg (reserve remaining egg). Spread and pat cheese mixture evenly over circle, leaving a 1/2" border along edge. Lay second circle on top and press gently along edge to seal.
3. Using a small glass or bowl (about 2" in diameter), make an indent in center of circle. Cut pastry into four quadrants, stopping when you reach center circle (be sure to cut through both layers of pastry). Cut each quadrant into four sections to make a total of 16 strips, stopping at edge of center circle.
4. Working with two strips at a time, twist pieces in opposite directions, then press ends together into a point to seal. Brush top of pastry with more beaten egg. Bake until pastry is golden brown, 25 to 30 minutes, rotating baking sheet halfway through. Let cool 10 minutes before serving warm or at room temperature.
