Glazed Wild Alaskan Salmon
Ingredients
1 tsp. canola oil
1 1/2 Tbsp. minced garlic
1 small Jalapeno pepper, seeded and minced
1/4 tsp. kosher salt, or to taste
1/4 tsp. ground chipotle pepper
1 Tbsp. fresh lime juice
2 Tbsp. honey
3 Tbsp. finely chopped fresh cilantro
1 1/2 lb. wild Alaskan salmon fillet
1/2 lime, cut into quarters (optional garnish)

Glazed Wild Alaskan Salmon

directions
1. Preheat oven to 475 degrees F. Line a baking sheet with foil and spray with vegetablecooking spray.
2. In a small nonstick skillet, heat oil over medium heat. Add garlic, jalapeño, salt, and chipotle. Cook and stir until jalapeño begins to soften, about 2 minutes. Add lime juice and honey. Mix until evenly blended. Remove from heat and stir in cilantro.
3. Place salmon skin-side down on the baking sheet. Pierce with a fork severaltimes. Brush glaze over salmon. Bake for 8 to 10 minutes or until just cooked through; the ends and sides of the salmon should flake easily.
4. To serve, divide the salmon into 4 portions. Garnish with lime quarters, ifusing. Serve warm.
