1. Bring farro, water, and 1/2 teaspoon salt to a boil in a large saucepan. Cover, reduce heat to low, and cook until grains are tender, about 20 minutes. Drain, then transfer farro to a large bowl; stir in dressing and set aside.
2. Meanwhile, cut tofu into bite-size pieces and drain 15 minutes between paper towels or clean kitchen towels, occasionally pressing gently.
3. Place a rack in uppermost part of oven (or about 4" from heat source) and heat broiler. Arrange tofu on a greased, foil-lined baking sheet. Coat lightly with cooking spray and sprinkle with seasoning, then toss to coat. Broil tofu until golden brown and crisp, 10 to 12 minutes, flipping halfway through.
4. To serve, season farro with salt and pepper to taste, then divide among bowls. Top with tofu, cucumber, onions, and avocado and drizzle with more dressing, if desired.
