Noodles & Cabbage
Ingredients
1 medium head cabbage, chopped (or 3 packages of shredded coleslaw mix)
6 each carrots, sliced thin and on diagonal
2 tablespoons butter
2 tablespoons Olive oil
1 pkg whole-wheat egg noodles (thin or medium width)
1 pinch salt

directions
1. Saute the carrots and cabbage in butter and olive oil in large, high-sided frying pan. Sprinkle with a pinch of salt.
2. Cover cabbage and carrots and keep heat at medium-low. Stir occasionally, cooking cabbage and carrots until sweet and tender, about 30 minutes.
3. While cabbage and carrots are cooking, cook noodles as directed on package. Drain noodles (reserving 1 ladleful of water).
4. Add noodles and reserved water to cabbage and carrots, tossing to combine. Serve immediately. Option: Add salt and pepper to taste.
