Pork Chops with Spiced Butternut Squash
Ingredients
Seared pork chops are paired with simple seasonal sides like sauteed apple and butternut squash for an easy fall dinner.
2 Tbsp. olive oil
1 (16-oz.) package Nature's Promise Boneless Pork Chops
1 (16-oz.) package diced butternut squash
2 Tbsp. unsalted butter, cut up
1 1/2 tsp. pumpkin pie spice, divided
1 large Gala apple
2 Tbsp. maple syrup

In a 12" nonstick skillet, heat oil on medium-high. Season pork chops with salt and pepper. Add to skillet and cook 3 minutes per side, until browned. Transfer to a plate.
Meanwhile, to a microwave-safe bowl, add butternut squash, butter, 1/2 teaspoon pumpkin pie spice, and 2 tablespoons water. Season with salt and pepper. Cover with vented plastic and microwave 4 to 5 minutes, until tender. Stir to combine.
While pork and squash cook, thinly slice apple. Add apple and 2 tablespoons water to the empty skillet. Season with salt. Cover and cook 2 minutes, stirring once.
In a small bowl, stir together maple syrup and remaining 1 teaspoon pumpkin pie spice and add to skillet. Add pork chops and spoon apple slices on top. Cook 1 to 2 minutes, until pork chops are cooked through and register 145 degrees F on a meat thermometer. Serve pork chops and apples with butternut squash.
