Pork Tenderloin with Honey-Roasted Cherry Tomatoes
Ingredients
Glazed cherry tomatoes roast right alongside a pork tenderloin for a delicious topper. This versatile main can be paired with any vegetable or starchy side.
2 pints cherry tomatoes
1 Tbsp. herbs de Provence or Italian seasoning
2 Tbsp. olive oil
3 Tbsp. honey
1 (1 1/2 lb.) pork tenderloin

directions
Preheat oven to 425 degrees F. Add tomatoes to a parchment-lined 18x13" rimmed baking sheet. In a small bowl, combine herbs, oil and honey. Season with salt and pepper. Stir until honey is dissolved. Drizzle half of honey mixture over tomatoes.
Pat pork dry with paper towels. Move tomatoes to make a space in the center of baking sheet. Place pork there and season with salt and pepper. Brush remaining honey mixture on pork.
Roast pork and tomatoes until a meat thermometer inserted in thickest part of pork reaches 145 degrees F, 30 to 35 minutes. Let pork rest 10 minutes before slicing.
