If you've got a leftover filet of salmon or trout from a favorite recipe, stretch it into two servings with a can of beans and some fresh produce for a delicious meal that will make lunchtime a treat.
4 oz. smoked salmon, flaked
1 (15 oz.) can no-salt-added black beans, drained and rinsed
1/2 avocado, diced
1/2 c. cherry tomatoes, halved
1 Tbsp. lime juice
1 tsp. olive oil
1/4 tsp. cumin
