Preheat oven to 425 degrees F. To a large bowl, add oil, garlic, and paprika. Season with salt and pepper. Add peppers, onion, and chicken and toss to coat.
Arrange vegetables and chicken, skin-side up, in a single layer on a large parchment-lined rimmed baking sheet (or two smaller baking sheets). Bake 30 to 35 minutes, until chicken is cooked through.
When done, drizzle with vinegar and sprinkle with parsley.
