Shortcut Potato Soup
Ingredients
This soup offers all the coziness of a classic favorite in half the time. Using pre-cooked bacon and mashed potatoes, this recipe simplifies the cooking process without compromising the flavor.
1 (2.1-oz.) package Nature's Promise Fully Cooked Bacon
2 Tbsp. unsalted butter
3 Tbsp. all-purpose flour
2 cups low-sodium chicken broth, plus more as needed
2 cups whole milk
1 (24-oz.) package Nature's Promise Yukon Gold Mashed Potatoes or 3 cups leftover mashed potatoes
1 tsp. onion powder
1 cup shredded Cheddar Jack cheese, divided
1/2 cup light sour cream, to garnish
1/2 cup sliced green onions, to garnish

Microwave bacon according to package directions. In a medium Dutch oven, melt butter over medium-high. Sprinkle flour over butter and cook until mixture is lightly golden, whisking constantly, 30 seconds to 1 minute.
Slowly whisk broth and milk into flour-butter mixture. Bring mixture to a simmer and cook until soup thickens, whisking occasionally. Stir in mashed potatoes, whisking thoroughly to remove any lumps. Season with salt and pepper. Stir in onion powder and 1/2 cup cheese.
Meanwhile, crumble bacon into small pieces. Remove soup from heat. If soup is too thick, add 1/4 cup chicken broth or water to thin to desired consistency. Divide soup among 4 bowls. Garnish with bacon, remaining cheese, sour cream and green onions.
