1. Crumble tofu over a double layer of paper towels and let sit 15 minutes; pat dry with another paper towel and transfer to a large bowl.
2. Add turkey, scallions, soy sauce, garlic, red pepper flakes, and baking soda to bowl and mix with hands until just combined (do not overmix). Divide mixture into four portions and gently form each into a 4"-wide patty; transfer to a plate.
3. Heat grill to medium-high, then clean and oil grates. Add patties, cover grill, and cook until bottoms are browned, about 5 minutes. Carefully flip patties using a thin metal spatula, close grill, and continue to cook until second side is browned and centers register 165 degrees, about 5 more minutes.
4. Transfer patties to a clean plate; let rest 5 minutes. Meanwhile, lightly toast cut sides of hamburger buns on grill. Serve patties with buns and your favorite toppings.
