Turkey-Oat Meatballs
Ingredients
Fiber-rich rolled oats stand in for breadcrumbs as the binding for these weeknight-friendly meatballs.
1 lb. 93% lean ground turkey
3/4 cup grated Parmesan cheese
1/2 cup rolled oats
3 minced garlic cloves
1 large egg, lightly beaten
1/2 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. olive oil

directions
1. Combine ground turkey, Parmesan, oats, garlic, egg, oregano, salt, and pepper in a large bowl. Using hands, knead mixture until it becomes cohesive.
2. Roll into 16 balls (about 2 Tbsp. each) and transfer to a large plate; refrigerate for 20 minutes.
3. Heat oil in a large nonstick skillet over medium-high until just smoking. Add half of meatballs and cook, turning occasionally, until golden all over, 6 to 8 minutes. Transfer to a clean plate and repeat with remaining 1 Tbsp. oil and meatballs.
4. Remove skillet from heat, then return meatballs to pan along with pasta sauce. Return to medium heat, then cover and cook, stirring occasionally, until centers of meatballs register 160 degrees, 8 to 10 more minutes. Serve with pasta or bread.
