1. Preheat oven to 350 degrees F. Spray a 9 inch pie pan with nonfat cooking spray.
2. In a large bowl, lightly whisk together eggs, being careful not to make them too foamy. Mix in both cheeses. Stir in mushrooms, onion, olives, and garlic, then add oregano, basil, salt, and black pepper. Stir until everything is well distributed.
3. Pour mixture into prepared pan. Bake at 350 degrees F for 50 to 60 minutes or until top is browned. Let sit for 15 minutes, then serve warm.
Part skim shredded mozzarella can be substitued for reduced fat shredded Cheddar cheese.
