1. Remove sausage from casing and brown in a large skillet over medium heat, stirring frequently and breaking up chunks, about 8 minutes.
2. When sausage is thoroughly browned, drain and add to a large slow cooker, along with all remaining ingredients. Stir to combine, and cook on low for 6 hours. Alternately, combine ingredients in a large pot and simmer on the stovetop over medium-low heat for 2 hours.
3. Ladle into bowls and serve hot, garnished with basil or oregano sprigs if desired.
