Preheat air fryer to 400 degrees F. Trim beets, if needed. Peel and cut beets into 1 to 2" wedges. In a medium bowl, toss beets with oil, orange juice, vinegar and honey. Season with salt and pepper.
Coat air fryer basket with cooking spray. Add beets to basket. Cook until beets are tender and crispy in spots, 16 to 18 minutes, flipping halfway through.
Tip: These beets are delicious warm, at room temperature or straight out of the refrigerator.
