Blueberry-Banana Baked Oatmeal with Walnuts
Ingredients
Make this breakfast bake ahead for a warm, satisfying meal on chilly mornings. Baked oatmeal can be reheated easily, making for a quick breakfast option throughout the week.
Cooking spray
2 cups old-fashioned oats
2 cups low-fat milk
2 cups low-fat milk
1/2 cup low-fat plain yogurt, plus more to serve
1 large ripe banana, peeled
4 large eggs
3 Tbsp. chia seeds
3 Tbsp. honey, plus more to serve
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. kosher salt
1 cup blueberries, plus more to serve
1/2 cup chopped walnuts, plus more to serve

Preheat oven to 350 degrees F. Lightly grease five 8-oz. ramekins with cooking spray and place on a rimmed baking sheet
To a blender, add oats, milk, yogurt, banana, eggs, chia seeds, honey, baking powder, cinnamon and salt. Blend until smooth. Pour evenly into each ramekin. Divide blueberries and walnuts among ramekins. Stir gently to combine.
Bake oatmeal until puffed and golden, 35 to 40 minutes. Let cool 5 minutes.
To serve, top with a dollop of yogurt and a drizzle of honey along with more blueberries and walnuts.
