Ingredients
Yes, you can cook fish in the microwave! A covered bowl perfectly cooks fillets in minutes without any lingering aromas.
1 (12-oz.) package Nature's Promise Atlantic Salmon Fillets, thawed
1/2 tsp. dried oregano
1 (5-oz.) package 50/50 salad mix
1 (14-oz.) can quartered artichoke hearts
1 small cucumber, sliced into half-moons
1/2 small fennel bulb, thinly sliced
1 (6-oz.) package red radishes, quartered
1 cup pitted Kalamata olives
1 cup tzatziki

directions
Add salmon to a small microwave-safe bowl. Sprinkle oregano over salmon and season with salt and pepper. Cover bowl and cook on high 3 to 4 minutes. Flake salmon into large chunks.
To a large serving platter or bowl, add salad mix. Arrange artichoke hearts, cucumber, fennel, radishes, olives, and salmon on top of lettuce.
In a small bowl, whisk together tzatziki and 2 tablespoons to 1/4 cup water, until desired consistency. Drizzle tzatziki over salad and serve.
