1. Prepare rice according to package instructions.
2. Meanwhile, heat oil in a large nonstick skillet over medium-high until shimmering. Add mushrooms and onion and cook, stirring occasionally, until softened and lightly browned, 5 to 7 minutes.
3. Stir in sauce and bring to a simmer. Gently fold in chicken and cook until just heated through, about 2 more minutes, then remove skillet from heat and stir in cilantro. Divide rice, chicken mixture, and broccoli among plates and serve with sour cream, lime wedges, and more cilantro.
