1 large sweet potato or yam
1 teaspoon salt
1 teaspoon cumin
1 teaspoon paprika
1 tablespoon olive oil

directions
1. Preheat oven to 450 degrees F. Cut root vegetables into matchsticks and place in single layer on a clean kitchen towel.
2. Sprinkle vegetables with salt and let sit for 5 to 10 minutes. Pat dry. Toss with cumin, paprika, and olive oil.
3. Roast in single layer on baking sheet or jelly-roll pan until crisp-tender, about 20 minutes.
