To a 6-qt. slow cooker, add onion, garlic, and ginger. Cut chicken into 1" pieces and add to slow cooker.
In a large bowl or measuring cup, combine coconut milk, tomato paste, curry powder, paprika, chili powder, and lime juice. Season with salt and pepper. Whisk to combine, then pour over chicken in slow cooker. Cover and cook until tender, on low 6 to 7 hours or high 4 hours.
Cook rice according to package directions and divide among bowls. Divide curry over rice. Serve with chopped cilantro.
