Tuna Salad in Cucumber Cups
Ingredients
1 6 oz can chunk light tuna, drained
2 tablespoons mayonnaise (or plain Greek yogurt)
1 each chopped scallion (optional)
1 dash ground black pepper
1 large cucumber, peeled
1 each small can sliced black olives (optional)

directions
1. Combine first 4 ingredients in a small bowl. Mix well.
2. Cut cucumber into 1" thick rounds. With a small spoon, scoop out the pulp and seeds of the cucumber, leaving about 1/4 cup of the seeds at the bottom, forming a "cup."
3. Spoon tuna mixture into the cucumber cups, creating a little mound on top of each. Top with an olive slice.
