1. Combine mayonnaise, Dijon mustard, dried tarragon, salt and pepper in medium bowl. Add chicken pieces, turn to coat well. Cover and refrigerate 2-3 hours.
2. Preheat grill to medium-high heat. Remove chicken from marinade, discard any remaining marinade. Thread chicken pieces onto wooden skewers. Lightly grease grill surface.
3. Grill chicken skewers, turning occasionally, until chicken is cooked through when checked, about 10-12 minutes.
